This cider has been aged for 11 months in mulitple former spirit barrels. This year we’ve used Brettanomyces yeast in the secondary barrel fermentation to produce a deep, full bodied cider with notes of stone fruit, dark cherries and oak on the palate, with a delicious dark spirit aroma.
