A “cider-drinkers cider.” Made with mainly Sunshine Coast apples, this has many heritage and cider varieties, giving it more tannin and depth. It has also been fermented drier. The initial fermentation was done “wild,” meaning the natural yeasts on the apple skins were used and then finished with our hybrid wine yeast.
